Herb Scones

Use almond milk from your Almond Cow in these delicious, savory Herb Scones. With the perfect amount of herbs and nutritional yeast for that cheesy flavor, these scones won't disappoint!

Servings: 8 scones

Ingredients

  • 2 cups 1-1 gluten free flour (or all purpose flour)
  • 1 tbsp baking powder
  • 1 tbsp ground flaxseeds (or dry egg replacement)
  • ¼ cup chives, thinly sliced
  • 1 tbsp fresh rosemary leaves, finely chopped
  • 1 tsp fresh thyme leaves, finely chopped
  • 1 tsp garlic powder
  • 2 tbsp nutritional yeast flakes
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 2 tbsp granulated sugar
  • ½ cup cold vegan butter, cubed
  • ¾ cup almond milk

Directions

Step 1

Preheat the oven to 400°F, then line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the dry ingredients and herbs (flour, baking powder, ground flaxseeds, chives, rosemary, thyme, garlic powder, onion powder, nutritional yeast, salt, pepper, sugar).

Step 3

Next, add the cold vegan butter, and use a pastry cutter (or your hands) to cut the butter into the dry ingredients. When ready, it should resemble a coarse meal.

Step 4

Afterwards, pour in the milk and mix until just combined. Lightly knead the dough until it comes together, then transfer to a floured surface to flatten and shape the dough into a square, about 1 inch thick. Using a large knife, cut into 8 triangles, then place the scones onto the prepared baking sheet.

Step 5

Bake for 22-26 minutes, or until golden brown around the edges. When ready, allow to cool before handling. Enjoy!
